Bone-In Roasted Turkey Breast Recipe

Ingredients

  • One bone-in turkey breast cut in half
  • Olive Oil
  • 1-2 Tbsp Poultry Seasoning or combination of thyme, sage, marjoram, rosemary and celery salt

Instructions

  • Preheat oven to 400°F
  • Line a baking sheet with foil for easy clean up.
  • Rub the breast all over with olive oil and some herbs.  
  • Place the 2 breast pieces on the baking sheet and roast the turkey for 1 hour. *Note if your breast is on the smaller size, check for doneness after about 45 mins.  Breast should read between 145 - 155 on a thermometer.
  • Remove from oven, let rest for a few minutes and then slice and serve!

Notes

  1. When buying your turkey breast,  ask your butcher to cut it in half for you.  You can also do this yourself at home with a solid knife, but I prefer to ask the expert.  His/her knife is stronger than mine!
  2. Of course this method isn't just for a small weeknight family meal.  You can roast a few cut breasts and feed a crowd! Just increase the amount of olive oil, herbs and spices and use a bigger baking sheet.  Getting ready to host?  Here are some tips on how to host a great family style dinner.
