A healthy and cheaper alternative to store bought almond butter.

Ingredients
2cupsraw almondsorganic preferred
2- 3tbspcoconut oil*melted
pinchof Maldon Sea Saltoptional
Instructions
Preheat oven to 250°F.
Spread almonds on a baking sheet and bake for 8 minutes.
Place almonds into Vitamix container.
Start machine at Variable 1 and slowly increase to the highest speed.
Use the tamper to press ingredients into the blade, or periodically stop the machine and use a spatula to scrape down the sides.
After blending for about 2 minutes, stop the machine and add in the melted coconut oil and a pinch of salt (optional).
Start the machine again on Variable 1, and then increase to Variable 8.
Blend for 30 seconds until desired consistency reached.
Notes
Nuts can be fickle sometimes. If your nut butter doesn't come together the way you want it the first time, don't panic. Just wait a little while for the machine and the nut butter to cool down and then repeat steps 7 and 8 again. You can also add a little bit more coconut oil or even a touch of honey to help it emulsify.*vegetable oil can be used instead of coconut oil if preferred.
