Healthy, Homemade and Fast Vitamix Almond Butter

I can’t believe it has taken me so long to make my own Vitamix Almond Butter.  Ever since I discovered “B & B Toast” (sprouted grain toast topped with almond butter, fresh blueberries and a sprinkle of cinnamon) back in 2014 while doing Hayley Pomroy’s metabolism reset, almond butter has been on my regular rotation.

Sure you can make your own almond butter in a food processor, but since I acquired a Vitamix last year, it’s a no brainer that I should be making my own in this uber powerful machine.

The original Vitamix Almond Butter recipe in the Vitamix Cookbook calls for 4 cups of almonds and 1/4 cup of canola oil.  I don’t know about you, but to me almond butter should be ultra healthy, and adding in canola oil just didn’t sit right with me.  Instead, I used a little bit of coconut oil and WOW, the slightly sweet coconut flavour makes this Vitamix Almond Butter OUTSTANDING!  And the texture is bang on.

Vitamix Almond Butter

Homemade Vitamix Almond Butter

A healthy and cheaper alternative to store bought almond butter.

Ingredients

  • 2 cups raw almonds organic preferred
  • 2- 3 tbsp coconut oil* melted
  • pinch of Maldon Sea Salt optional

Instructions

  • Preheat oven to 250°F.
  • Spread almonds on a baking sheet and bake for 8 minutes.
  • Place almonds into Vitamix container.
  • Start machine at Variable 1 and slowly increase to the highest speed.
  • Use the tamper to press ingredients into the blade, or periodically stop the machine and use a spatula to scrape down the sides.
  • After blending for about 2 minutes, stop the machine and add in the melted coconut oil and a pinch of salt (optional).
  • Start the machine again on Variable 1, and then increase to Variable 8.
  • Blend for 30 seconds until desired consistency reached.

Notes

Nuts can be fickle sometimes.  If your nut butter doesn't come together the way you want it the first time, don't panic.  Just wait a little while for the machine and the nut butter to cool down and then repeat steps 7 and 8 again.  You can also add a little bit more coconut oil or even a touch of honey to help it emulsify.
*vegetable oil can be used instead of coconut oil if preferred.
